The Great Kabab Factory (TGKF) is the first locale that springs to my mind if I am in a mood for a high protein kebab meal. Kebabs derive their origin from the rich culinary heritage of the 14th century Mongols when they were just a piece of meat, salted and barbecued. However, now they are refined to be a melange of meats, vegetables, spices,\u00a0dried fruits, and nuts that are\u00a0either roasted in a clay oven, deep fried in a kadhai <\/i>(wok), fried on a tawa<\/i> (griddle),\u00a0or even steamed in a pan.<\/p>\n

LOCATION<\/b><\/span><\/h2>\n

TGKF is located at Radisson Blu Marina Hotel, Connaught Place and MGF Metropolitan Mall, Saket in Delhi.<\/p>\n

I tried the Saket outlet.<\/p>\n

AMBIANCE<\/b><\/span><\/h2>\n

The seating is ample. The decor seems to be a sort of take on the Mughal period,\u00a0but honestly,\u00a0I felt it was a tad tacky and could appeal to foreigners looking for an ‘authentic’ Mughal experience.\u00a0 It felt very 70\u2019s sort of restaurant or maybe a typical Mughlai restaurant in New York.<\/p>\n

SERVICE<\/b><\/span><\/h2>\n

The waiters are dressed in dark blue overalls for the ‘factory’ look – Cutesy!\u00a0 They were well-informed about the dishes and were\u00a0courteous and nimble on their feet \u2013 definitely a plus from my side.<\/p>\n

FOOD<\/b><\/span><\/h2>\n

There is a fixed menu for the day. It starts off with Vegetable and Fruit Salad<\/i> served with an interesting,\u00a0though little \u2018essence-y\u2019, Strawberry Chutney<\/i>. The highlight of the menu is obviously the kebabs, but the only ones that hit the right notes were Galauti Kababs<\/i> (minced lamb with nutmeg, cinnamon, cardamom, and bay),\u00a0cooked to a smooth consistency,\u00a0mouth-melting, with a burst of flavours, served with tiny ulta tawa (inverted griddle) Paranthas<\/i> and Amritsari Fish<\/i>,\u00a0which was fried with a hint of chickpea and caraway. The chicken was a very typical,\u00a0unexciting barbecue as were the vegetarian kebabs, which included tandoori aaloo<\/i> (roasted potatoes), paneer<\/i> (curd cheese), broccoli, and pineapple \u2013 very run-of-the-mill.<\/p>\n

My favourite part of the meal was actually the accompaniments to the kebabs \u2013 the interesting Tomato and Tamarind Chutneys<\/i> and the breads \u2013 Bakarkhani<\/i> and Sheermal<\/i>. Bakarkhani<\/i> is legendary bread named so after the tragic love story of Aga Bakar and Khani Begum. It is a flaky puff, pastry-like layered, thin crisp bread, which is baked in clay oven\u00a0with saffron flavour. Needless to say it is\u00a0awesomely delicious and worth its weight in gold. Sheermal<\/i> is a soft inner and crispy outer scrumptious flatbread, akin to\u00a0a scone, with a hint of sweetness and cashew paste.<\/p>\n

The main course of Biryanis<\/i>,\u00a0Dals<\/i>,\u00a0Chicken Korma,<\/i> and\u00a0Vegetable Navratan<\/i> is avoidable \u2013 very routine spread.<\/p>\n

The dessert ranged from an above average Paan and Rose Ice-Cream<\/i>, good warm Gulab Jamuns<\/i>,\u00a0average Shahi Tukra<\/i> to superb, almost best I’ve ever tasted Phirni<\/i>. \u00a0Like most Indian meals, the meal ended with a traditional paan.<\/p>\n

All in all,\u00a0I was a little disappointed. If the aim of the chain is to attract foreigners or NRIs who want to try a simple, traditional, and old times-type Mughlai meal,\u00a0then maybe they fit the bill,\u00a0but at Rs. 995 plus per head. However, if The Great Kabab Factory wants to be considered as a regular option for any discerning foodie of Delhi,\u00a0then they need to keep up with the times. The same menu for over 10 years can’t pull people in today, and innovations and experimentation in the menu are merited for\u00a0today’s discerning clientele. At present,\u00a0the only attractions for me were Sheermal<\/i> and Bakarkhani<\/i>,\u00a0but I don\u2019t think that\u2019s enough to get me back in again!<\/p>\n
