Why Americans keep eating the same meat

Americans definitely consume a lot of meat each year but it comes from only a few meat-producing animals: Pork, beef, chicken and a little turkey.
North Americans are known to have experimented with a variety of animals including deer and squirrels but that doesn't show in their menu choice. This fact may have a lot to do with the history of meat industry.
There was a time when Europeans had to turn to the US for their beef since their cattle suffered from a virus. Hence, huge amounts of stuff was packed for consumers. Moreover, considering that a lot of meat tastes quite like chicken, the Chinese have included different types of meat in their industry.
America also suffers from a lack of recipes, which could potentially include more types of meats.
