Among all the Lebanese recipes chickpeas in sesame oil is not only easy to cook but at the same time is delicious to taste. This dish made out of chickpeas in sesame oil is called Hummus. There are three steps to cook chickpeas in sesame oil in Lebanon. The first step is to assemble the ingredients. Then comes the preparation or the method of cooking.
The ingredients required to cook chickpeas in sesame oil are 1 pound and one and half ounce of chickpeas, 10 ounce of tahini, 7 ounce of lemon juice, 1 clove garlic which should be mashed properly in a certain portion of the salt, 5 tablespoons of cold water, chopped parsley and red pepper for the final touch.
For cooking chickpeas they should first be kept in cold water for a ten hours. When half soaked soda should be added. Then the chickpeas should be taken out from the cold water, washed and mixed with 3 pints of cold water and soda. The mixture should be then cooked over high flame till the appearance of foam. The heat should then be reduced and the contents cooked for about two hours.
The garlic should be mixed with salt till the mixture becomes fine. The cooked chickpeas after being drained out from water should be stirred with the mashed garlic. After these two are mixed well it is poured into a masher, which can be a potato masher or food blender. To this should be added the lemon juice. The entire mixture should then be strained through a strainer. Shallow plates should be used to serve the contents. The dish can then be decorated with chopped parsley and red pepper. For decoration the chickpeas, sliced radishes and black olives can also be used.
