Ful

Ful, in Egyptian refers to a variety of beans in Egypt, which can be cooked up to various recipes. The most popular among them are Ful nabed
beans, Full Medames or Egyptian brown bean stew and Ful Sudani or peanut macaroons. The recipes are easy to toss up and healthy to eat.

Ingredients for Ful Nabed Beans

  • 1 cup Chopped onions
  • ¼ cup Olive oil
  • 2 x Garlic cloves, pressed
  • ¼ teaspoon Cayenne
  • 1 ½ teaspoon Sweet Hungarian paprika
  • 1 teaspoon Ground cumin seeds
  • 2 Bay leaves
  • 3 ½ cup Vegetable stock
  • 1 cup Chopped fresh tomatoes
  • Large carrot, chopped
  • 2 cup Canned or cooked fava beans
  • Salt and freshly ground
  • 3 tablespoon Fresh lemon juice
  • ¼ cup Chopped fresh parsley
  • Black pepper to taste
  • Fresh mint leaves

Cooking Ful Nabed Beans

  • Stir the garlic and the onion in a cooking pan until the onion turns translucent in texture.
  • To this add cayenne, bay leaves, cumin, carrots and place cook on medium flame for about five minutes.
  • To this, add the vegetable stock and the cut tomatoes. Cook or at least fifteen minutes. Check if the carrots have become suitably tender.
  • The Ful or the Fava beans should be added in the final stage of cooking, as it does not take much time to cook. Add pepper and salt taste.
Sprinkle fresh mint leaves on the Ful Nabed and served hot, accompanied with can be served with Pita Breads. The dish can be eaten is a nutritious light meal or snacks.
