Egyptian Green Soup Moloukhiya

Egyptian Green Soup/Moloukhiya is a traditional Egyptian recipe, which should suite the palate of one and all. This dish is sometime tastier

when prepared with spicy ingredients and sometimes it is also prepared less spicy, depending on the choice of the consumer. It is very healthy and can be used as a regular soup. In countries, where Moloukhiya leaves are not available, spinach can be used instead. However, in order to bring the thickness of the soup, it is advisable to use Okras.

Ingredients Required For Egyptian Green Soup/ Moloukhiya Soup

  • 1 pound fresh or thawed, frozen Moloukhiya leaves
  • 6 cups chicken stock
  • 1 teaspoon ground coriander
  • 2 tablespoons olive oil or butter
  • Black pepper, to taste
  • 4 - 6 garlic cloves, minced
  • 1 teaspoon salt
Optional Items
  • Cayenne pepper to taste
  • 1 tablespoon tomato paste
  • 1 tablespoon fresh coriander leaves (cilantro) or fresh parsley, finely chopped
  • Juice of 1 lemon or 1 teaspoon vinegar
  • 1 hot chili pepper, cleaned and chopped
  • 1 bay leaf
  • One small onion, finely chopped

Cooking Egyptian Green Soup/ Moloukhiya Soup

The Moloukhiya leaves are finely chopped and the leaves are dried on tissue papers or tea towels. Heat the chicken stock over a high flame till it comes to the boiling point and then add the chopped leaves to the stock and add chili pepper, black pepper and bay leaves. After about a few minutes, put the flame on low to medium flame and simmer the mixture for about 20 minutes. Make a fine paste of garlic and coriander leaves and cook the same in oil for about 3 minutes. The garlic will become brownish in color. Now add the garlic coriander mixture to the Moloukhiya mixture along with the optional ingredients.


Now, the Egyptian green soup/Moloukhiya is steaming hot and ready to be served with either plain boiled rice or Chicken.
