Aji

Aji is a very famous Ecuador Food, which is a type of sauce that is made of red pepper. The name of the dish is derived from its most important ingredient, red pepper, which in Ecuadorian language is known as Aji. This Ecuadorian food is also known as “picante”.

Main Ingredients of Aji

The major ingredients that are required to prepare tasty Aji are Aji pepper juices, Cilantro, lemon, red or green onion, and slices of tomatoes.

Types of Aji

There are several methods that are followed for preparing Aji. Depending on the method of preparation, Aji can be divided into two types, Aji Costeño and Aji Serrano.

  • Preparation of Aji Costeño – The former is a lighter variation of Aji. For its preparation, you need to cut down Aji into small slices. These slices are then boiled and left to be cooled down. "Cebolla Blanca" and Culantro are then added to it.
  • Preparation of Aji Serrano – for preparing this, it is required that the Aji is mixed with important ingredients such as tomato and tree tomato. This is thicker than Aji Costeño.

This Food of Ecuador is available in most of the restaurants around the country. However, it should be kept in mind that there are several methods of preparing Aji. Hence, the taste of Aji also varies from one place to another.
