Canelito, commonly called Canelazo, is a typical Ecuador drink that is served hot. Canelito is made from sugarcane liquor, locally called 'aguardiente', or fire water. The ingredients of making Canelito are :
- 1 cup 'aguardiente' or sugarcane liquor
- 3 cups of water
- 1 cup light brown sugar
- 6 cinnamon sticks
- 1 teaspoon lemon juice
This will produce sufficient quantity for six people.
Preparation
1st Step – The sugar and cinnamon sticks are put in water and made to boil
2nd Step – After the water is boiled, it is taken out from the oven. 'Aguardiente', or the sugar liquor is poured into the hot water. Care is to be taken, that the water must not be boiling.
3rd Step – This mixture is put into the fire, but never boiled. It has to be taken in and out of the fire so that the liquid mixture remains hot but does not boil.
4th Step – When still very hot it is removed from the fire and the lemon juice added to it before serving. Canelito is served in thick glasses.
Unlike other drinks, alcoholic or non-alcoholic, Canelito or Canelazo is a hot drink. It is an extremely popular Ecuador drink, and very much belonging to Ecuador.
