Ingredients for Sipya (Cuttle fish cooked with its ink):
- 1 kg of cuttlefish and its eyes, beaks and guts are removed and the ink sacks are reserved for cooking
- 60 ml of olive oil(4 tablespoon)
- 1/ 4 litre of dry white wine
- 1 tablespoon of brandy
- 1/ 2 tablespoon of starch
- 2 finely chopped medium onions
- 3 to 4 cloves of garlic (crushed)
- 2 coarsely chopped ripe tomatoes
- Pinch of Pepper
- Seasoning

Preparation:
Heat olive oil in a large saucepan and when the oil gets hot fry the chopped onion until tender. Now add crushed garlic and continue frying for 2 minutes and successively add cuttlefish and cook for another 25 minutes on low heat. Then add the wine followed by chopped tomatoes and pepper and cook for 30 minutes. Take a small bowl and dissolve the starch and add the ink sacks to it and then pour this mixture into the saucepan along with brandy. Season all the ingredients well and place the saucepan lid and cook for 45 minutes until the whole stuffs gets tender. Now this mouthwatering Sipya is ready to be served.
Ingredients for Ahtapot Salatasi- Octopus Salad
- One octopus about 300gms, cleaned and cut into large pieces
- 1½ litre of water
- 1 tablespoon of oil
- 150 gm finely chopped onion
- 250 gm of peeled ripe tomatoes cut into pieces
- 2 tablespoon of parsley finely chopped
- 2 spring onions chopped
- 2 tablespoon of capers
- 90 gm of cocktail olives sliced through the middle
- 4 tablespoon of lemon juice
- ½ tablespoon of sugar
- 2 tablespoon of olives
- Seasoning Heat water in a saucepan and add salt to it. When the water starts boiling add the octopus pieces and cook it for 45 minutes till tender and then drain well. Take a large sized salad bowl and put the octopus piece, chopped onion, chopped tomatoes, chopped parsley as well the green olives and mix them well.
Now prepare the sauce in a separate bowl by mixing olive oil, lemon juice, salt and pepper. Pour the sauce over the salad and serve it with fresh buttered bread.
