Customs and Traditions: Chicago has a large Irish population. Every year, for St. Patrick's Day, in honor of its Irish heritage, the city of Chicago dyes the Chicago River green in color. Green beer is added on the menus of restaurants throughout the city. Chicago also celebrates by holding two parades – the official Chicago parade on the Saturday before St. Patrick's Day and the South Side Parade on the Sunday before St. Patrick's Day.
