Making the Luchi
Luchi and Alur Dom is one of the most delicious of Bengali dishes of Kolkata. During festival seasons this delicacy is highly in demand. This combination also makes for a great break fast. Luchi tastes great even with Cholar Daal, Mutton Curry and rice pudding.
Ingredients Required: Maida or white floor: 6 cups, white oil: 4 to 6 table spoons, warm water, salt to taste, oil for deep frying.
Process of Making Luchis: Knead the floor with oil and a little water. Do not add too much water as that may make the flour balls too soft to be made into the luchis. After kneading properly divide the dough into small balls. Now with a roll pin flatten the balls and make them perfectly even and thin. Deep fry the flattened doughs in white oil or ghee. Instead of white floor, gram floor can also be used but in that case the crispness of the luchis decrease. Serve the hot luchis with 'aloor dom' or any other matching dish of your choice.
Making Alur Dom
Ingredients Required

Potatoes: about fifteen small ones.
Cumin Powder (Jeera Powder): 1 tea spoon
Tomatoes: 1or 2, chopped in four pieces each
Ginger paste: 1 Table Spoon Full
Yogurt: 2 tea spoons
Ghee: 1 tea spoon
Salt to taste
Sugar to taste, preferably less than a teaspoon
Red Chilli Powder
Oil
Hing or Asafoetida
Chopped fresh coriander leaves
Cooking Alur Dom You can either boil the potatoes and then proceed with the cooking or even use raw peeled potatoes for cooking the Alur Dom. In a Karhai or a deep pan add enough oil and wait for the oil to heat up. After this, add the chopped onions and the tomatoes. When, the onions are lightly fried, add the spices and the ginger paste and the yogurt. Add ghee and the potatoes. If the paste becomes too thick, add little water to make thick gravy. Let the potatoes become tender. Till the potatoes become tender cover the pan. Just before turning off the gas garnish with the fresh coriander leaves and add a sprinkle of garam masala powder. Luchi and Alur Dom is one of the favorite delicacies of the indigenous inhabitants of Calcutta.
