Dimbo Devil is a tasty Bengali snack, which is easily available at the roadside food stalls and small restaurants in Kolkata. This light informal meal can be best enjoyed with evening tea. Ingredients used for Dimbo Devil
Egg - 4
Red Chili Powder - 1/2 tsp
Cumin Seed Powder - 1/2 tsp
Potato - 4 big ones
Onion - 2 big, finely sliced
Garlic - 2 pods finely chopped
White part of 1 Egg
Cooking Oil - 2 tbsp
Ginger paste - 1 tsp
Raisins - 7/8
Cooking Oil - 1/2 cup, for deep frying
Bread crumb - as required

Procedures for making Dimbo Devil
First of all boil three eggs and de-shell them. Then cut each into two halves. Boil potatoes without the skin and smash them. Add little bit of salt to it to the boiled potatoes.
Pour oil in a big frying pan. After the oil is heated, add chopped onions, garlic and ginger paste to it and start stirring it at intervals. Then add red chili powder and cumin powder to the paste. Fry till it turns brown in color. Now add the smashed boiled potatoes and mix well. Keep stirring for few minutes. Remove from heat and add the raisins.
Take the egg halves and envelope them with the mashed potatoes to form an oval shaped ball. Now dip these balls in the white portion of egg and roll them on crumbled bread.
Heat oil in a shallow frying pan and deep fry the egg balls till they turn golden brown in color. Dimbo Devil is ready and can be served with tomato or chili sauce. Dimbo Devil is savored with great enthusiasm by the local inhabitants of Calcutta.
